Orange Pecan Muffins

I am always very ambitious when buying fruit at the grocery store but I can never come close to eating all of it.  Even though I've been eating several mandarin oranges every day, I have a huge pile still left.  That's why I decided to put them in a muffin.

Orange Pecan Muffins

About 5 mandarin or clementine oranges
1/2 cup sugar
2 1/4 cup flour
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon allspice
1/4 cup margarine
2 tablespoon arrowroot powder
6 tablespoons water
1 cup soy milk
2/3 cup chopped pecans

Peel the oranges and chop them in a food processor.  You should have about 1 cup when you are done.  Mix with the sugar and set aside.

In a large bowl combine the flour, baking powder, and spices.  Cut in the margarine until it resembles coarse bread crumbs.  

In a separate bowl, combine the arrowroot and water.  Stir in the milk.  Add this to the flour mixture.  Stir until just combined.  Add in the pecans and oranges.  

Spoon into a lined muffin tin and bake at 400 degrees for 18 minutes.  

I had some left over batter even after filling the cups all the way to the top.
